The Best Keto Mac and Cheese
This recipe subs the carby macaroni for healthy cauliflower.
Add heaps of crispy bacon, cream cheese, and bubbly melted cheddar and you have a side so decadent it should be the main course.
And with just 30 minutes to prepare, you can whip this one together last minute.
Keto or not, you’re guests will be blown away by this recipe.

The Recipe

Ingredients

4 | strips bacon |
4 oz |
cream cheese

1/3 cup | heavy cream |
2 cups | cheddar cheese, shredded |
1 | large head cauliflower |
4 cups | water |
2 tsp | salt, divided in 2 |
1 tsp | paprika |
1/4 tsp | cayenne pepper |
1 tsp | finely chopped parsley for garnish |
Directions
1 | In large pan, cook bacon over medium-high heat until crisp (about 6 minutes). Remove from pan, set aside, and finely chop into crunchy bacon bits once cooled. |
2 | Add water to pot and bring to a boil |
3 | While water boils, chop cauliflower into small dime-sized pieces. |
4 | Add 1 tsp salt and cauliflower to boiling water. Cover pot and boil 4 minutes until cauliflower is slightly tender. Drain and set aside. |
5 | In same saucepan, add cream cheese, heavy cream, cayenne, paprika and remaining teaspoon of salt. Stir to combine. |
6 | Cook mixture 4 minutes over medium heat, until sauce is smooth and thick. |
7 | Add cauliflower and cheddar cheese to the sauce, reserving some shredded cheese for later. Stir until cheese is melted. |
8 | Mix in bacon bits |
9 | Top with remaining shredded cheddar and broil in the oven until cheese is bubbly and starting to brown on top |
10 | Garnish with chopped parsley and enjoy! |
