|12||organic chicken wings (~2 lbs)
|1/2 cup||hot sauce (Cholula or Tapatio)|
|6 tbsp||grass-fed butter|
|1||In large pot, bring 1 inch of water to a boil|
|2||Place wings in a steaming rack and place into the pot|
|3||Cover and reduce to a simmer; steam wings 10 minutes (removes excess fat that will smoke badly in oven otherwise)|
|4||Place wings on wire rack over paper towels and refrigerate for 1 hour (this is essential to dry wings and make crispy)|
|4||Preheat oven to 425°F|
|5||Discard paper towels and replace with parchment paper underneath the wire rack|
|6||Bake wings 20 minutes|
|7||Flip wings and bake 20 minutes more|
|8||While wings are baking, melt butter in saucepan and add to a large/wide bowl. Whisk in hot sauce.|
|9||Put wings from oven right into sauce bowl and toss until covered.|
