The Recipe

12 Cookies 20 minutes

Ingredients

1 Egg
1/2 cup Salted butter
1 1/2 cup Almond flour (we use Blue Diamond)
3/4 cup Erythritol (we use Lakanto)
3/4 cup Sugar-free chocolate chips (we use Choc Zero)
1/4 cup Optional: Chopped nuts of choice (we use our Maple Candied Pecans)
1/4 tsp Salt (we use Redmond Real Salt)
1 tsp Vanilla extract
1/2 tsp Baking powder
1/2 tsp Xanthan gum

Directions

1 Preheat oven to 355 deg F.
2 Microwave butter 30 seconds to melt.
3 Add butter and erythritol to mixing bowl and beat 15 seconds on low until combined.
4 Add vanilla and egg, beat for another 15 seconds on low.
5 Add almond flour, baking powder, xanthan gum, and salt and beat until mixed.
6 Remove dough from bowl and knead in chocolate chips and chopped nuts if desired.
7 Shape dough into balls and place on baking tray (you should get 9-12 balls).
8 Bake for 10 minutes, checking to ensure the cookies flatten and the center is just set.
